my favourite vegan recipes

I'm sure many of us have reached a point in our desire to eat healthier where we hit a wall and ask ourselves, What in the world do I eat today? When you open up the door to the fridge, the pantry and the stash (you know, the place where you hide your chocolate!), and you just can't find a thing to eat! It's not because there's nothing in there, but in trying to make the best food choice, we are stumped as to what that is. There are many opposing dietary theories out there but most can agree that the bottom line of choosing the best sources of macronutrients is to eat good fats, quality protein and unprocessed carbohydrates. Eat real, fresh and whole foods. And so, here are some of my favourite vegan recipes that helped me and continue to help me make the best choices for my body every day… and counteract the chocolate consumption! Bon appetit!

You can choose breakfast, lunch, dinner and snack options from this list of some of my favourite vegan recipes. Even if you start to eat one day a week from this list of plant-based meals your body will thank you inside and outside. green vegetable juice


1 cup filtered water (blender use only)
1 celery stalk
1 kale stalk, without stem
1/2 cucumber
1/2 lemon, with or without peel
1 cube ginger, with or without skin

Wash all ingredients before passing through a juicer or using a high-powered blender to blend with a cup of water and then strain through a nut milk bag or cheesecloth. Pour into a 500ml glass bottle or BPA-free/stainless steel drink bottle and top up with filtered water. Chill in the fridge. Sip slowly through a straw… and feel good! :-)

iin australia & berry nice cream

How are you, my friends? Me? I've had an ah-mazing week full of birthday celebrations and a weekend in Sydney for the Institute for Integrative Nutrition's live conference in Australia! I've had heaps of fun this week but I'm so thankful for slow Mondays to rest, recalibrate and rite write. One of my goals for this year has been to write more and I am making space for this during the week. Another goal has been to reduce the amount of natural sugars in my diet to help my body heal from Candidiasis. This week I am trialling going completely sugar-free! I'm counting on the amazing wellness community out there and have already come across these sugar-free vegan recipes. I'm also inspired by Pete Evans, a paleo chef here in Australia, to eat vegetables for breakfast!

…he was a guest speaker at the conference I attended on the weekend for the Institute of Integrative Nutrition, the New York based school through which I am studying Health Coaching. The one-day conference was held in Sydney, so I flew in on the Saturday arvo as I didn't want to miss the awesome vegan dinner for IIN peeps at the organic restaurant Bodhi. If you are in Sydney, I highly recommend you try this place out! The food was a delicious array of a la carte entrees, mains and dessert. Our dessert was a raw sticky date and cacao mousse fruit tartlet. Absolute food heaven!

On the Sunday I attended the conference with like-minded Australian health and wellness coaches and coaches-in-training including fellow Melburnian, the vivacious Kristy from Friends Gather Round, to be inspired by amazing guest speakers and the school's founder and visionary, Joshua Rosenthal. There is a health revolution dawning and health coaches are on the front lines of the battlefield. Joshua, in his gentle and inspiring way, reminded me of a few things that are crucial for advancing… being healthy is easy, being sick is complicated; health is a vehicle, not a destination; don't let procrastination or being paralysed stop you from pursuing your dreams. 


Sometimes I think the thing we can do to best serve the world is this… dream. And then, just do it.

berry nice cream


2 bananas, peeled and frozen
1/2 cup frozen mixed berries
1/4 cup dried shredded coconut 
1/2 tsp of ground cinnamon
sprinkle cacao nibs & goji berries, to garnish

Place the bananas, berries, shredded coconut and cinnamon into a high-powered blender or a food processor. Blend until smooth and creamy - use a tamper to push the ingredients into the blades of the blender (you may need to stop and stir the mixture once or twice). Pour into a bowl and serve with cacao nibs, goji berries and your choice of freshly sliced fruit. Drizzle with pure maple syrup or yacon syrup for delightfully gooey goodness. Serves 1-2.

birthday wings & wishes

Thank you for tuning into my blog again! You'll have to forgive me as I'm a little bit scatterbrained at the moment because… it's my birthday tomorrow! I've been having a good ole time celebrating early pretty much for the last week. It started when I found out I'd won a kombucha home brew kit from a competition I entered. Just today I've started my first batch of kombucha as I did a happy dance in the kitchen. If you want to know more about the why and how of kombucha check out these articles here and here. I love kombucha for it's ability to help heal the gut, which in turn, heals the body. Amazing!


My mum tells me that I was born on a Tuesday and tomorrow is a Tuesday. I will be 28 years young. I've been blessed with dinners, presents and well-wishes. My parents gave me a beautiful Swarovski ring (last year my dad told me that Swarovski was for birthdays ending in zero - so, I figure I must be turning 20 again!) and are taking me to the Johnny Farnham concert tonight. I've wanted to see him in concert for a loooong time and my wish is finally coming true! I'm so excited I can't take the pressure down (you gotta know his songs to get that one folks)!

Being born with a twin I've shared many birthdays. Since my twin moved to the other side of the world birthdays just haven't been the same. But this year is different. I am making the most of this birthday. I am stretching it out and revelling in it. I guess for many of us birthdays make us reflective. The turning of the clock is like a landmark for our lives. Am I where I thought I would be at this point in my life? No, I'm not. But I wouldn't change the way my life has unfolded. I've laid many dreams down over the years but now I realise they were just fantasies. As the years unfold I realise that the greatest riches in my life come from hard places and the passage of time. Waiting. This birthday I appreciate those things (and when I say things, I really mean people) more than ever. 




With birthdays come wishes. The deepest dreams and desires within my heart are now surfacing more and more and I am following my heart more and more. As a Christian I believe that God is a good Father and loves to bless His children just because He can. Just because He loves us. Before my birthday day He's blessed me with a pre-birthday week! But there are some things in life that I can't make happen even if it's a desire in my heart. There are some things that I must wait for. And wish for. And pray for. And so my dreams go up to God in prayer. And this year my birthday wish is that those dreams would grow wings and fly.

breakfast & buckwheaties

For many people breakfast is heralded as the most important meal of the day (except people who are "allergic" to mornings!). While I follow a light-to-heavy style of eating throughout the day to allow for more optimal digestion of food, many start their day with either fried foods or sugary cereals. I hope you can agree that this is not the most optimal start to anybody's day, especially if you want to avoid the mid-morning munchies!

Before you hand over your precious pennies for a McHeartAttack on your way to work I want to throw a few scrumptious breakfast ideas your way! With a little bit of planning and preparation during the week and the night before, you can have a delicious and nutritious breakfast ready to go in the morning.

buckwheaties


2-6 cups buckwheat groats 

Soak buckwheat in filtered water for 45 minutes before rinsing and sprouting (sprout in a bowl at room temperature) for 24 hours. Spread the sprouted buckwheat groats evenly over dehydrator trays with or without reusable teflex sheets and dehydrate at 40 degrees Celcius or 105 degrees Fahrenheit for 8-15 hours until dry and crunchy. Store the gluten-free buckwheaties in an airtight container and serve with almond milk and fresh fruit for breakfast or a satisfying snack!

orchard st cleanse

Since I've been back from my overseas adventure my body has been screaming at me for rest. The chronic illness I am recovering from, Chronic Fatigue Syndrome, flared up. Imagine feeling like you are permanently jet-lagged. And combine that feeling with the exhaustion of running a marathon and waking up with a hangover. That's the illness. So, after a month of feeling like I hadn't recovered well (and I bounce back a lot quicker these days!) I decided to take action and do a liquid cleanse to give my body the rest it was asking for.


For this cleanse, I chose to do an organic liquid cleanse through the Sydney-based company Orchard St. They work to help people Cleanse, Heal, Nourish & Grow through 3-5 day liquid cleanses, which are designed by a naturopath. Each cleanse (there are three cleanses to choose from) has six alkaline, raw vegan drinks including one green smoothie, one fermented tonic, two cold-pressed juices, one elixir and one nut milk. You can also add medicinal teas and booster shots to any cleanse to support your individual health needs. I love that Orchard St use Australian bush foods and wild weeds in their drinks, which not only boosts the nutritional value but supports local farms and sustainable farming methods, and I love that you are walked through the cleanse with uplifting emails the whole way.

My cleanse has been for 5-days on a combination of the cleanses and 3-days of immune boosting teas and shots. My mouth was sooo on fire from all the ginger! Each day I've been drinking 3L of drinks and 3L of water. With all that drinking and running to the toilet I haven't had much time to lament the fact that I haven't been eating solid food! As always, the first three days are the roughest, but apart from a feeling of nausea by the end of the day, I've felt really good on this cleanse. My digestive system is having a nice rest and my energy levels have been surprisingly stable. I've been able to study, go shopping, hang out with my cousin, sing at church, write this blog… and I'm not getting afternoon dips in energy! 

To add more impact to the healing effect of this cleanse I intensified my normal cleansing practices by doing daily oil pulling, coffee enemas and a colonic, dry skin brushing, bush-walking, epsom salt baths, clay face masks, journal writing, deep breathing, earthing, lots of sweet sleep, and by starting the day by drinking warm water with lemon juice to flush down probiotics, and ending with my dose of chlorella tablets. Keep in mind, I incorporate many of these into my daily routine anyway, but together with my cleanse, I've supported my belly, liver, kidneys, lymphatics, skin and nervous system to get rid of the nasty toxins and waste that have been making me feel so heavy and exhausted. And though it may seem full on, all I've had to do is be willing to rest for awhile.
